Strawberry Rhubarb Pie with Crumble Topping

This pie was a definite winner in our house! Bo said it was the best thing I've ever made! 
It's a variation of my gramma's Rhubarb Custard Pie... I just changed up the recipe to incorporate the strawberries! 
It's just so easy & so delicious. Not too sweet, not too tart.
I use pre-made pie crusts, but I'm sure having a crust made from scratch would make this pie THAT much better! But pre-made works for me :) Time is of the essence around these parts! Haha!
The rhubarb came from our yard, & the strawberries were on sale at the store for $3 a quart! I'm definitely not used to freshness when it comes to produce. Back in my home town, produce would be on it's way out by the time the trucks brought it to town. These strawberries came from Nova Scotia, which is just a hop, skip and a jump away! There was even grass still in these berries! That's how you know it's farm fresh! 
Strawberry Rhubarb Pie with Crumble Topping Recipe

Preheat oven to 400 degrees F. Line a baking sheet with tinfoil.

Ingredients for the pie
1 9 inch uncooked pie crust
2 cups halved strawberries [or quartered, depending on the size]
3 cups of chopped rhubarb
1/2 cup granulated sugar
1/4 cup brown sugar
2 eggs
2 tbs flour
2 tsp vanilla

Ingredients for the topping
3/4 cup flour
2 tbs brown sugar
1/2 cup oats
1/2 cold cubed butter

1. In large bowl, whisk sugars, eggs, flour and vanilla together until well combined
2. Stir in strawberries & rhubarb.
3. Pour mixture into your pie crust.
4. In a separate bowl, mix together all topping ingredients, minus the butter.
5. Cut in butter or use your hands to mix butter in. The mixture should be crumbly, and the butter should be the size of peas.
6. Pile topping on your pie filling & spread evenly.
7. Put your pie on your baking sheet & cook on 400F for 15 minutes.
8. Lower heat to 350F and bake for 30 minutes or until top is golden brown.
9. Make sure to let the pie sit for a couple hours so it can set, otherwise it will be too runny when you cut into it.

5 Month Postpartum Update!

2 months... It's been 2 months since my last blog post. Oops! 
Here are a bunch of 4 month photos of Hunter! I'll post his 5 month photos at the end of his update.
He's going bald!



He's into mini naps.

Breastfeeding in the backseat while dad washes the car! Had to cover the little guy's head because he was way too distracted!

We've upgraded to big boy towels.

We just had an appointment this morning with our nurse practitioner. 
He turned 5 months today!


Height/Weight:
He is 68cm & 16.9lbs. 

Routine:
Make in through the day in one piece.
Jk... Kinda.
We wake up around 7am and he's usually pretty chill. He'll play with me in bed or he'll bop along to some kiddie YouTube videos in his exersaucer. He's only up for about an hour before he goes down for another nap. I usually try to eat and sweep during this nap. Dog hair. Drives me bonkers. Mental break downs, all the time. Anyway.... So then he's up somewhere around 9 or 10...Nurse.. Play for maybe an hour or 2. Nap. Wake up after an hour or so, & nurse. I usually try get to the dishes around this time.
So now were sitting around 12-1pm...
This is where life gets a bit trickier.
He stays up longer, and needs more attention, and he also fights sleep really hard. He's pretty difficult to put down for a nap in the afternoon. He usually has one sometimes between 1 and 6pm... This is when I'll try to make dinner.
Then we bath around 7pm then I try to tire him out and get him to sleep. He's usually down between 8:30 and 9:30pm.
And as always, he sleeps through the night, waking maybe twice to eat.

Sleeping:
His first 2 naps are easy to put him down for. He usually sleeps for about an hour or so. His afternoon nap is usually much harder. He fights sleep really hard in the afternoon, therefor tends to get super cranky come evening. He still sleeps all night though!
All his naps, and when he goes down for the night are done in his own room, but I keep him in bed with me when he wakes up around midnight or so. Our rooms are currently far apart, and if I was to wake, nurse, and put him back down for the night, I would lose so much sleep. Call me selfish, but I am not into that. It's too convenient to keep him in bed with me in the middle of the night. He sleeps, I sleep. It's a huge win. 

Eating/Feeding:
Still exclusively breastfeeding. Yay for 5 months of that! We got the go ahead today to start introducing solid foods! Iron fortified food first, then fruits & veggies. She recommended cereals, but I don't want to give him cereal. She also recommended meat or hardboiled egg yolks.

Sizes:
He's pretty much in 6-9 month clothes now. There's still a few 3-6 month things that fit him, but there's also a few 9 month things that fit him.
He's also in size 4 diapers.

Milestones:
Oh my. Where do I even start? I'm probably going to forget so much because he's grown SO much over the last couple months!
He sits up on his own. 
He'll see something he wants, and he'll grab it. 
He can roll belly to back and can do back to belly with assistance.
He can roll back to side.
He follows objects. 
He knows what "up" means.
He tries so hard to crawl.
He can pull himself up & stand.... for a really long time too!
He babbles and laughs.
He has a favorite toy and a favourite song, and a favourite spot in the house!
He knows his name.
Like I said, I'm probably forgetting so much.
They grow too fast don't they?

3 Month Postpartum Update!


3 months already. So crazy! 
There's really not a whole lot about myself to update... again. Haha! If you read my "Fitness?!" blog post, you'll know that I was going to try increase the health factor in my life. I've still be walking and I've gone on a couple runs. Woo! 
I'm getting better at eating better. "Add more good things, so there's less room for the bad things!" is a great quote to try live by, in all aspects of life, not just food. I like to eat simply. The less ingredients the better. Or eat things found along the edges of the grocery store, and not the aisles... That's another good tip I find helps! 
Still have no idea how much I weigh, and I haven't taken any measurements... but I probably should do that soon! 
I almost lost my mind last week when Hunter was losing his. I discovered how important "me time" really is. It's not easy to do, but I'm trying to get more of that "me time" in my life! It is so necessary to have, in my opinion, in order to be the best mom you can be!  

Here is a blog post with my thoughts on motherhood and my experience on how it can be such a struggle sometimes.


This is how I get housework done sometimes. Let the baby hang out in the carrier while I do laundry and dishes haha! He isn't the biggest fan of this carrier. I need to experiment with more... but I find the long fabric ones [that I desperately wish I had!!!!] are so pricey! I just can't bring myself to spend over $50 for a wrap, as much as I want to!

Now onto that cute little infant boy of mine! No longer a newborn! Gah! So big, so fast!


Height/Weight:
I'm not sure how much he weighs. We haven't had him weighed since he got his shots at 9 weeks. 
I tried to measure him myself, & I got 67 cm!!
I'll get a more accurate height and weight at this 4 month appointment.


Routine:
Ahh we don't really have one. It's basically the same as it was 3 weeks ago. Wake up at 7 am-ish. Nurse. Play. Then we do this like 5 times throughout the day, maybe... If he decides to nap. Sometimes he'll wake up as I'm trying to lay him down, and then that's it.. He won't go back to sleep. Bath around 7pm. Bed around 9 or 10. He sleeps for about 3 hours when he goes down for the night, then up every couple hours after that. 


Sleeping:
Not enough. Lol! I don't know how long the average baby naps for during the day, but mine doesn't like to sleep for long! If I get an hour nap out of him, I'm thanking the gods. He typically naps for like, 20-40 minutes every couple hours. He's extended his bedtime, which is now at like 9 or 10 instead of 7 or 8.... He still wakes up at about 7 am though. 



Eating/Feeding:
Still basically exclusively breastfeeding with the random bottle here and there for car rides. I'm trying to get him to feed when he wakes up from naps, so he doesn't associate my boobs with sleeping... but I do still need to nurse him before he falls asleep sometimes - if he's been awake for a long period of time. He nurses every couple hours in the middle of the night... Half of which I'm barely awake for since we've started to master nursing while laying down! WIN!

Sizes: 
Well.. I've started packing up his 0-3 month clothes. I put a 0-3 month onesie on him yesterday, and his shoulders were busting out of the top!! Haha! He's still fitting 3 month clothes, but not for long. His main size right now is 3-6 months. I had to buy a few 3-6 month sleepers yesterday because he only had 1! I'm willing to bet those don't last long, so I won't be buying anymore. 4 will have to do because I'm sure I'll be needing to get 6-12 month soon!
He's still in size 2 diapers, but once this box is done, I'll be putting him in size 3's.

Milestones:
Well he's officially and "infant" now and not a "newborn"!! *Cries*
He rolled over! I think it was a fluke though. The unevenness of the bed probably helped with that.... But he definitely rolled over from his front, to his back, to his front again. It was exciting. 
He's getting so ticklish, it's so fun! 
He giggles so much now... & laughs in his sleep.
He keeps getting more and more attentive. He's so aware of his surroundings. 
He chews on anything & everything. He's such a drool monster! I'm sure he's going to be teething soon, if he isn't already! I keep feeling & looking in his mouth, but I don't see anything yet!
He loves standing!! With help, of course.
He's starting to lose so much hair! When he was born, he had thick dark hair! Now, he looks like he has a receding hairline haha! I read that sometimes when a baby loses their hair, the new hair that grows back can be a completely different colour! Maybe he will end up having blonde hair like his dad???
