Easy Cheesy Chicken Avocado Enchiladas!

Here's another recipe post!
The quality of these photos vary greatly. They were taken at all different times of the day due to  either
1) getting busy with something else (my baby) or
b) forgetting I was cooking them. Haha!
This is sooo good and sooo easy to make. I'm also definitely not claiming this is a healthy dish by any means. It's covered in cheese. Otherwise, I guess it's not too bad... change up the flour tortilla for a whole wheat, or corn tortilla... use different or less cheese...add more veggies and it's a healthier enchilada!
You'll need a pre-cooked rotisserie chicken, or any kind of chicken you want to use. I tend to get the whole cooked chicken because it's half the price of boneless skinless chicken breasts and I can usually make two different dishes from all the meat.

You're also going to need:
 Small tortillas
Salsa of your choice
Plain Greek Yogurt
Avocados
Onion
Garlic cloves
Cheese
Cilantro
+ oil & butter to cook the onions in

This is completely just a guideline.... This can be changed up any way you want it!

I like to take all the chicken off the bone first, because I know if I don't, the remaining chicken will just sit on the bone in the fridge & will most likely end up in the garbage. I use my hands to take all the chicken off, but you can obviously use a fork & knife. Once all the chicken is off, I divide it in half and put the other half in the fridge for another meal. [I mixed it with cheese and made quick quesadillas!]

I used two 8x8 pans. You could use a 9x13 or whatever you have!

Easy Cheesy Chicken Avocado Enchiladas
6-10 small tortillas - depends on how much filling & space you have
1 small jar of salsa or about 2/3 of a large jar
1 container of Plain Greek Yogurt
2 avocados, chopped
1 medium onion, sliced
2 garlic cloves, minced
2+ cups cheese
A handful of chopped cilantro
1 tbs oil & butter [to cook the onions in]

*Preheat oven to 400F
1. Cook the onions in a pan until soft and golden
2. Add the chicken, avocado, cilantro and garlic & season with salt & pepper to taste. Stir until combined and then turn the heat off
3. In a bowl, mix together the greek yogurt & salsa to make the sauce. Add some to your baking pan to cover the bottom.
4. Time to assemble!
-Lay one tortilla out and sprinkle with cheese.
  -Add some of your filling
-Drizzle some of the sauce on top
5. Roll tortilla up & place seam side down in pan. Continue until you fill the pan.
6. When all your tortillas are ready, pour some more sauce on top so the tortillas are covered.
7. Sprinkle with cheese.
8. Bake for about 15-20 minutes or until top is golden and bubbly!

Make sure to let it sit for a few minutes because it's going to be hot!

The amount of filling, cheese, and sauce you use is completely up to you. If you like more sauce, add more... If you want more cheese, shred some more!
Don't let anyone tell you there's such a thing as too much cheese. That's a lie.

If you make these, let me know! Post a photo on Facebook or Instagram & tag me in it!

It All Goes By So Fast Doesn't It....

I remember the days of going to school. All year you were just waiting until summer holidays. The year would just drrraaagggg on by. Then the summer would come and it would go by so fast! Sleeping in, not having to go to class, being with friends, fishing, swimming, going on road trips.
Oh the life.
Then you get older & get a job, rent a house, buy a car..... Time tries to slow down but you're still wishing for vacations, waiting for the weekend, or waiting for your work day to be over so you can get a drink with friends. Then all of a sudden it's a year later & you're like "Wow, I can't believe it's been a year!"
Then you get pregnant.
Pregnancy, my friends, was the fastest 9 [10months + 10 days, lets be real] months of my life! It was like once I found out we were expecting a baby, the weeks just started flying by, getting closer and closer to your due date. 10 weeks, 20 weeks, 30 weeks, then you're due date comes and goes & you're left wondering how on earth did 42 weeks go by so fast?
Then you see your baby for the first time. His wee little nose and his tiny little toes. So new to the world. Not knowing anything except you. Then you subconsciously do the same thing over again... Waiting for him to hold his head up on his own, to sit, to stand, to crawl.... Then once he's doing these things, you're like, "where did my baby go!?"

Sometimes you just gotta enjoy the now!
I've come to learn that wishing for the future robs you of the present... & why would you want to miss out on the present?
Look at that spitty drooly boy!
I'll be over here, soaking up all the moments <3

Strawberry Rhubarb Pie with Crumble Topping

This pie was a definite winner in our house! Bo said it was the best thing I've ever made!
It's a variation of my gramma's Rhubarb Custard Pie... I just changed up the recipe to incorporate the strawberries!
It's just so easy & so delicious. Not too sweet, not too tart.
I use pre-made pie crusts, but I'm sure having a crust made from scratch would make this pie THAT much better! But pre-made works for me :) Time is of the essence around these parts! Haha!
The rhubarb came from our yard, & the strawberries were on sale at the store for $3 a quart! I'm definitely not used to freshness when it comes to produce. Back in my home town, produce would be on it's way out by the time the trucks brought it to town. These strawberries came from Nova Scotia, which is just a hop, skip and a jump away! There was even grass still in these berries! That's how you know it's farm fresh!
Strawberry Rhubarb Pie with Crumble Topping Recipe

Preheat oven to 400 degrees F. Line a baking sheet with tinfoil.

Ingredients for the pie
1 9 inch uncooked pie crust
2 cups halved strawberries [or quartered, depending on the size]
3 cups of chopped rhubarb
1/2 cup granulated sugar
1/4 cup brown sugar
2 eggs
2 tbs flour
2 tsp vanilla

Ingredients for the topping
3/4 cup flour
2 tbs brown sugar
1/2 cup oats
1/2 cold cubed butter

1. In large bowl, whisk sugars, eggs, flour and vanilla together until well combined
2. Stir in strawberries & rhubarb.
3. Pour mixture into your pie crust.
4. In a separate bowl, mix together all topping ingredients, minus the butter.
5. Cut in butter or use your hands to mix butter in. The mixture should be crumbly, and the butter should be the size of peas.
6. Pile topping on your pie filling & spread evenly.
7. Put your pie on your baking sheet & cook on 400F for 15 minutes.
8. Lower heat to 350F and bake for 30 minutes or until top is golden brown.
9. Make sure to let the pie sit for a couple hours so it can set, otherwise it will be too runny when you cut into it.

5 Month Postpartum Update!

2 months... It's been 2 months since my last blog post. Oops!
Here are a bunch of 4 month photos of Hunter! I'll post his 5 month photos at the end of his update.
He's going bald!

He's into mini naps.

Sitting up for the first time on his own!
These two... Haha!
No, were not related.
Breastfeeding in the backseat while dad washes the car! Had to cover the little guy's head because he was way too distracted!

We've upgraded to big boy towels.
Hunter's first bonfire!
So happy to be barefoot on the grass!
Lots of mom and baby cuddles these days.

Hunter's first waterfall!
We just had an appointment this morning with our nurse practitioner.
He turned 5 months today!

Height/Weight:
He is 68cm & 16.9lbs.

Routine:
Make in through the day in one piece.
Jk... Kinda.
We wake up around 7am and he's usually pretty chill. He'll play with me in bed or he'll bop along to some kiddie YouTube videos in his exersaucer. He's only up for about an hour before he goes down for another nap. I usually try to eat and sweep during this nap. Dog hair. Drives me bonkers. Mental break downs, all the time. Anyway.... So then he's up somewhere around 9 or 10...Nurse.. Play for maybe an hour or 2. Nap. Wake up after an hour or so, & nurse. I usually try get to the dishes around this time.
So now were sitting around 12-1pm...
This is where life gets a bit trickier.
He stays up longer, and needs more attention, and he also fights sleep really hard. He's pretty difficult to put down for a nap in the afternoon. He usually has one sometimes between 1 and 6pm... This is when I'll try to make dinner.
Then we bath around 7pm then I try to tire him out and get him to sleep. He's usually down between 8:30 and 9:30pm.
And as always, he sleeps through the night, waking maybe twice to eat.

Sleeping:
His first 2 naps are easy to put him down for. He usually sleeps for about an hour or so. His afternoon nap is usually much harder. He fights sleep really hard in the afternoon, therefor tends to get super cranky come evening. He still sleeps all night though!
All his naps, and when he goes down for the night are done in his own room, but I keep him in bed with me when he wakes up around midnight or so. Our rooms are currently far apart, and if I was to wake, nurse, and put him back down for the night, I would lose so much sleep. Call me selfish, but I am not into that. It's too convenient to keep him in bed with me in the middle of the night. He sleeps, I sleep. It's a huge win.

Eating/Feeding:
Still exclusively breastfeeding. Yay for 5 months of that! We got the go ahead today to start introducing solid foods! Iron fortified food first, then fruits & veggies. She recommended cereals, but I don't want to give him cereal. She also recommended meat or hardboiled egg yolks.
Let me know what you first fed your baby!

Sizes:
He's pretty much in 6-9 month clothes now. There's still a few 3-6 month things that fit him, but there's also a few 9 month things that fit him.
He's also in size 4 diapers.

Milestones:
Oh my. Where do I even start? I'm probably going to forget so much because he's grown SO much over the last couple months!
He sits up on his own.
He'll see something he wants, and he'll grab it.
He can roll belly to back and can do back to belly with assistance.
He can roll back to side.
He follows objects.
He knows what "up" means.
He tries so hard to crawl.
He can pull himself up & stand.... for a really long time too!
He babbles and laughs.
He has a favorite toy and a favourite song, and a favourite spot in the house!
He knows his name.
Like I said, I'm probably forgetting so much.
They grow too fast don't they?

Here's some 5 month photos!

All ready to go blueberry picking!

The sound of running water calms him. Thanks tub.

He was nursing but then realized I was trying to take a photo haha!
